COE Cupper Camp

This year, ACE launches an extensive cupper training program called COE Cupper Camp! Based on the Cup of Excellence (COE) protocol, the “gold standard” of cupping methods, this program allows us to share COE knowledge with those who want to improve their businesses by driving coffee excellence.

ACE members, non-members, roasters, retailers, importers, exporters, producers, green buyers and baristas with cupping experience are invited to join us for fun, four- or five-day intensive training in a relaxed but active environment. The COE Cupper Camps are a great opportunity for you to improve your sensory skills to evaluate coffee with greater accuracy, consistency and confidence, while also building relationships among fellow members of the global coffee community.

Results

COE Cupper Camp participants will be able to identify various aspects of quality in the cup such as: exemplary or ordinary specialty; clean, sweet, balance and harmony; and good versus sour acidity. Cuppers will be able to define quality both verbally and through appropriate and consistent scoring.

COE Jury Eligibility

All COE Cupper Camp participants will take the official Cup of Excellence National Jury exam. Those with favorable reviews of “recommended” or “highly recommended” will be eligible to register as a COE jury member in 2016 or 2017, bypassing the prerequisite “observer” status. Each cupper will receive individual results by email within two weeks of testing. ACE membership required for jury participation.

All COE Cupper Camps include:

  • An introduction to the COE protocol
  • Instruction on COE Cupping Sensory Score Sheet
  • Flavor recognition
  • Acid profiling
  • Cupper calibration
  • Multiple cupping sessions with lively discussion

Field Trips

All five-day camps take place in origin countries and include a group tour of coffee farms and mills where you may see picking or processing in action. Four-day camps in other countries may include a self-guided tour of cafes or roasters offered by the local host.

Certificates

All COE Cupper Camp participants will receive a Certificate of Participation on the final day of camp.
